Madhouse recipe : Strawberry & Mango Cobbler



I got a double lot of strawberries in my fruit & veg box this week so, after chopping some up for dessert, with a scoop of Kelly's Cornish ice cream, I decided to go and look for a recipe to use up the other punnet. I found some inspiration in my Leon : Book 3 - Baking & Puddings recipe book and adapted their Strawberry & Blueberry Cobbler Recipe (which is gluten-free - mine isn't).

Strawberry & Mango Cobbler


Ingredients :

250g fresh mango
500g strawberries
50g golden caster sugar
4 tbsp cornflour
200g self-raising flour
50g salted butter
150ml crème fraîche

Method :

Preheat the oven to 180°C/350°F/gas mark 4.



Chop the mango and strawberries and toss them in a bowl with the sugar and cornflour. Pour them into an ovenproof dish.


Put the flour and butter in a bowl and use a fork to break the butter into small pieces. Add the crème fraîche and mix until it all comes together.


Form into a ball and transfer to a table sprinkled with icing sugar.


Roll out to 2cm thickness. Sprinkle with icing sugar if required, to prevent it sticking to the table top or rolling pin.



Cut out rounds with a cookie cutter.


Place the pastry rounds on top of the strawberries and mango.


Bake in the oven for 35-40 minutes, until the fruit is bubbly and the topping golden brown.


Sprinkle with icing sugar and serve hot or cold.

Everyone thought this was really nice and made a nice change to crumble. Sophie has asked if we can try it again with other fruit during the week, starting with apples and pears as that is what was in our fruit & veg box this week ! It's a fairly healthy dessert and you use less pastry than you would in a pie so it's got to be lower in calories too.
